Every time I go to the grocery store I buy at least 4 cans of tuna (solid or chunk). I hardly use them but I keep buying as if I’m preparing for some disaster where loads of canned goods are needed. Recently, I looked into my pantry and realized that I NEED to stop buying tuna. They are just accumulating. So in an effort to get rid of some of the cans of tuna I have stockpiled, I decided to make these tuna-potato patties. They’re simple, very delicious, perfect for a snack or even entree.
Ingredients:
mashed potatoes
2 cans solid albacore tuna packed in oil
a small handful parsley
paprika
sazon/seasoned salt
salt & lots of freshly ground black pepper
2 eggs
breadcrumbs
oil for frying
Method:
1. Flake the tuna and mix it and the parsley with the mashed potatoes. Add all other ingredients one at a time and mix well
2. Set aside for 15 minutes for flavors to meld. Then form patties.
3. Heat a frying pan over medium heat and pour in oil to about a 1cm depth. Fry the cakes in batches (don’t overcrowd the pan) for a couple minutes on each side, until they’re golden brown.
4. Serve with cocktail sauce or tartar sauce or both
Bye For Now…..

oh hey! That’s a great idea!! Looks delicious too!! Yeah, I hear ya… Sometimes I buy so many ingredients thinking that I will someday use them, but they end up accumulating in my kitchen, just waiting to be used! I should definitely try this out. I have a whole loaf of bread that just expired today…..
Looks good. I am always looking for something different to do with canned fish.
haha! our pantry looks like it’s ready for nuclear fallout too! These look lovely. Hubby is always asking me to make fish cakes.
