Seems like lately, I’ve just been going wild with ginger eh? Ginger in this, ginger in that. What can I say? I loveeee ginger! And I especially love ginger in a cocktail. Lime and ginger to be exact. I’m an island girl. As I sat next to my PIC watching men in tights run up and down a field, tackling one another for a ball, itching to tell him “Please change the channel!”, I inhaled deeply, got up, walked to the kitchen and made this. I didn’t have any Gosling’s Brothers Dark Seal Rum on hand (which is what the original recipe calls for) so I went with Bacardi gold rum instead. In any case, two sips of this cocktail and the football didn’t even bother me anymore!
Ingredients:
1 cup ginger beer
1/2 cup dark rum
1/8 cup fresh lime juice
brown sugar syrup to taste
lime wedge, for garnish
Method:
Combine ginger beer, rum and syrup with ice. Garnish with lime wedge.

I once had ( a long time ago) a very nice dinner in a Ghana restaurant in Berkeley, CA and I remember that I ordered their delicious ginger-lime drink that might be similar to this. I will definitely give this one a try :)

Found you through Chica, and I’ve been looking for a Dark and Stormy recipe and this one with the brown sugar syrup looks like the ticket to a happier weekend! We have a local bar that makes these and they’re half price when it rains! It’s supposed to rain all weekend, but I think I’ll stay in and make these myself, thanks so much!
