Black Bean and Turkey Burger

This was really supposed to be a black bean burger but I had about 1/2 cup (yes half of a cup) of ground turkey lying around in the freezer and decided to incorporate it as I didn’t know how my PIC would take to this burger. He is a meat/poultry/fish/just-something-to-go-with-the-sides type of person and presenting a meatless BURGER (of all things) might have him on strike. I can’t afford to lose my taste tester and my biggest food consumer now can I? Compromise. I must say for me to even consider making this was surprising because if you had ask me to make this a year ago, I would have blank stared you for a good 5 minutes (throwing in some side eyes too) but after talking to my friend Vee the other day and after we made our vegan cookies, I am now really open to trying vegetarian/vegan dishes. Did someone just gasp?!! Anywhoos, this burger was very delicious and I think it would be just great without the addition of turkey. I am definitely going to make this without the turkey or any meat next time. My taste tester also agreed that it was delicious and why wouldn’t he? Just look at it!

Ingredients:
1 can (15 ounces) black beans
1/2 cup finely chopped sweet red pepper
1/4 cup red onion, diced
1 tsp chili powder
1 tsp cumin
1/2 tsp pepper
1/4 tsp salt
1/2 cup ground turkey
1 tbsp olive oil
1/2 cup crushed tortilla chips
Handful of cilantro, chopped

Method:
In a small bowl coarsely mash SOME of the beans. Add the seasonings and oil. Mix well, then add crushed tortilla chips and combine.

In a large skillet or on a grill, cook burgers in oil over medium heat for 4-5 minutes on each side. Take care with these burgers (I omitted the egg the recipe called for and found my patties easy to break).

Serve on buns with onion, tomato, lettuce and your favorite condiments

Did I mention how good it was?

  1. That is an amazing looking burger! And I had to smile about your comment about serving meatless (or fishless) food to your PIC. Big Man is the same so if I don´t say something is veggie he´ll eat with relish and then realise the next day that we have just had a “veggie” day!

  2. I cannot comment on the amount of chicken, pork, turkey and beef that pass through this kitchen, except to say that it’s RI-diculous, I def have a meat and potatoes man (and little men!). They will eat black bean burgers, though (I wrote a post awhile back…)!

    I really like the addition of cumin, cilantro, and crushed tortilla chips here– this sounds like a good one to try!

  5. This looks really good, Tia. I’ve never tried black beans in a turkey burger, but yours combined with the guacamole makes my mouth water! It must be black bean week…lots of black bean recipes going on.
