It’s Friday!!!!!!!! The best day of my week is here because it’s the weekend and I get to relax and kick back with my honey! WoooHooo. I know you can tell I’m excited. So, in case you don’t know by now I love all things shrimp, all things coconut, all things black bean and all things GINGER! I’ve made so many ginger based cocktails (some posted, others not yet) it’s not funny. I like the kick ginger gives any and every thing it’s added to. Today, this drink is a twist on the classic cocktail called “Gin Rickey”. A Gin Rickey is, in a nutshell, gin, soda and lime on ice. The good thing about classics though is that sometimes it’s good to give them a good shake up. This improved drink right here is so so so good! Try it. Soon!
Ingredients:
2 ounces gin
4 ounces ginger ale
2 dashes of Angostura bitters
juice of one lime
Method:
Over ice, pour the gin and then the ginger ale. Then add a dash or two of bitters. Finally squeeze the lime juice. Mix well and sip, sip, sip

You could totally use apple juice or white grape juice in place of the gin. Enjoy (if you do try it with the substitutions)

I don’t drink alcohol anymore but an Asian fusion restaurant I love serves Lime Rickey shrimp and I never knew what a lime Rickey was. I wonder if I can replicate the sauce using this as a base?!?!
I would totally try it. Would you use any gin in the sauce or just the lime and the ginger? If no gin, I would go lime, ginger, some chicken stock and some soy sauce (with some water and let that simmer till it thickens.) If you’re using gin, then lime, ginger, a little chicken stock, soy sauce and gin. Simmer till it thickens.
I think the gin is probably important for flavor.
