Last week I was on a little health kick at my house. I spent 2 days juicing/detoxing and I have to be honest and say that by the second morning I was feeling so much lighter. My routine for those two days was to wake up, drink a smoothie then have a snack around midmorning, a very light lunch at noon, early dinner at around 4pm and then a smoothie at 6pm. I’m so keeping that routine. Two day out of each week nothing but strictly healthy meals and juices/smoothie. My body NEEDS it. This salmon was my dinner for the first night. The entire meal was filling but not in the way that would have you feeling guilty afterwards. It certainly made me feel good! It was scrumptious and healthy and I don’t ever think you can go wrong with that.
Ingredients:
1 filet salmon, thawed if frozen
2 tbsp lemon juice
1/2 tsp dried
2 tsp olive oil
1 tbsp lemon pepper seasoning
3 cloves garlic, minced
Method:
1. In a small bowl, combine ingredients (juice through garlic). Place fish in a zip top bag and add marinade. Turn to coat evenly. Marinate in fridge for 30 minutes to 1 1/2 hours.
2. Drain fish, reserving marinade. In a pan or grill, cook fish for 6-8 minutes on each side, brushing with the reserved marinade halfway through. Discard any remaining marinade. Fish is done when it begins to flake when tested with a fork.
3. Serve with sauteed spinach and brown rice.

This looks great! I do a similar dish. It is a wilted spinach and salmon with a orange balsamic glaze. I will have to try it this way next….looks yummy!

If its salmon count me in any preparation would do for this favorite fish of mine, that lemon seasoning looks like it would further enhance the wonderful flavours of this fish.
I rather enjoyed he lemon-pepper pairing with this fish. So delicate but noticeable too!
I’d like to run away with that sauteed shrimp. MMmmmmmm. I need to make myself love salmon. I want to, but I just can’t seem to get on the salmon train. Maybe if I try this?

When you Google heart healthy food salmon is always at the top of the list. I know I need to incorporate it. Sigh. I’m gonna work it out soon. Very soon.

Gosh, this looks good! I am a seafood person all the way. Salmon is particularly one of my favorites. So tell me more about juicing/detoxing! I am interested in it :)
Salmon is pretty cool because it’s an amazing canvas for all types of flavors.
Now as for the detoxing, I want to say up front that I’m no expert on the matter. I’m just doing this because I want to give my body a break on some days.
On two consecutive days each week, I blend fruits to make smoothies. At first I added yogurt and sugar or honey but now I just blend the fruits. As many as I can find – all sorts of combinations and I continuously sip throughout the day. Around 1pm or so I have a solid (but small) and healthy meal (for example this salmon, brown rice and spinach was one such meal) and then for the rest of the day I go back to sipping the smoothies. Two days. Each week. And my body feels GREAT on the second day. I’m hoping to take it to 4 days soon but doing baby steps for now.
