Chicken in Sweet Chili Sauce

I bookmarked this recipe about 6 months ago. Saw it and immediately wanted to make it. The thing is, I never got around to it until last week and then when I tasted it, I honestly wanted to beat myself up for taking that long to make it. The recipe is super easy to make and it’s truly flavorful. This is definitely going to be my go to chicken recipe when I have little time but I’m longing for a scrumptious meal.

Ingredients:
Cornstarch slurry; 2 teaspoons soy sauce plus 1/2 tbsp cornstarch
2 large boneless chicken breasts, sliced into thin, pinky sized pieces
2 tablespoon high-heat cooking oil
1 shallot, thinly sliced
4 cloves garlic, minced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 tbsp fish sauce
4 tbsp soy sauce
1/2 cup sweet chili sauce
1 small handful fresh Thai basil or sweet Italian basil leaves*

*I didn’t have any on hand so I didn’t use.

Method:
1. In a large bowl, make the cornstarch slurry by stirring together 2 tbsps of soy sauce and cornstarch until the cornstarch dissolves.

2. Add the chicken and toss to coat well. Marinate for 10 minutes at room temperature.

3. Set a wok or large frying pan over high heat. Add the oil and then chicken in one layer and cook for 2 minutes, flipping halfway.

4. Remove the chicken from the wok, keeping as much oil in the pan as possible. The interior of the chicken will still be raw (it will get added back into the wok to finish cooking).

5. Lower the heat to medium and add the shallots and garlic. Stir fry for 30 seconds.

6. Add the red and yellow bell peppers and stir fry for 1 minute, until the peppers are softened, but still have a nice crunch in them.

7. Pour in the fish sauce, soy sauce and sweet chili sauce and stir well.

8. Add the chicken pieces back to the pan with peppers and sauce. Let simmer for 2 minutes. and the sauce should be glossy and thickened. Turn off the heat and stir in the fresh basil leaves.

  1. fish sauce… not sure I can find that in my local store– any ideas for a substitute? When I was grocery shopping this past weekend I looked errywhere for the oyster sauce called for in one of your recipes (which I will be attempting very soon… if I am successful I’m gonna reblog– with your permission, of course!) and I couldn’t find that either. What’s a girl trapped in a cultureless world to do?!

    This looks like it needs me to cook it :)

      I’m not really sure how to describe fish sauce because the taste is unique. A combination of anchovy paste and soy sauce, probably. I’ve cooked recipes that called for fish sauce and just used soy sauce mixed with a little chicken or vegetable stock in its place. I’ve heard soy sauce and a drop of lime also but personally I don’t think it’d make a huge difference without it.

      As for oyster sauce, have you seen hoisin sauce in the stores? (International/Asian aisle of grocery) If you have, I think that’s a perfect choice to use in place of oyster sauce. Although others may disagree. If no hoisin is available, I’d go with a mixture make of soy sauce, a pinch of sugar, chicken broth and a tad bit of corn starch.

      And go for it- you have my permission!
