Yogurt Brûlée

I promise I’m not going to start singing the praises of crème brûlée…again. But I will tell you that I love it so so so so so so very much. If you’ve missed my crème brûlée posts, check out my Classic Crème Brûlée and my Amaretto Crème Brûlée. They WILL make you drool. Alas, as many of you know, the summer (ok ,spring) is swiftly approaching and dear old Tia is trying to get in shape. Not just for summer but I need to make lifestyle changes so I’ve been opting for better alternatives of not so-good-for-the-body stuff. I make my crème brûlée with heavy cream so you can only imagine how that’ll work out for me if I were to eat the stuff every week, right? So with that said, I needed to come up with an alternative because my new-ish torch is feeling very neglected. I scoured the net for a delicious treat and came up with this! Lip-smacking does not begin to describe how good this yogurt brûlée is. Try it for yourself and tell me differently!

Inspiration and Recipe from The Wishful Chef

Ingredients:
3 6 oz container thick yogurt
1/2 cup blueberries, or to taste
3/4 cup Granola, or to taste (I used my homemade granola)
2-4 tsp sugar

Method:
1. In a small bowl, mix together yogurt, blueberries and granola.

2. Depending on how much fruit and granola you add, spoon mixture into two to four ramekins. Top each with sugar and spread evenly (my sugar started dissolving as soon as it hit the yogurt)

3. Pre-heat broiler on high. Broil in oven for about 5 minutes or until sugar has browned. If you’re using a blowtorch like I did, slowly sweep the flame back and forth about 3 inches away from the surface until the sugar melts and caramelizes into a shiny brown color (This took a while!). Garnish with more fresh blueberries.

Do you see that delicious thin crust? This is some reallllyyyy good stuff!!!

Bye For Now…..

  1. What a lovely way to start the day! I’m so happy that we’re starting to see more blueberries in the store (love my berries). Bookmarking this for when my in-laws come to stay with us in May.

  2. Great idea – I too love creme brulée but my waistline tells me I need to eat something less naughty. Yogurt is a great replacement and I love all these berries you have been using!

  3. dang! Creme brulees are the best!! thanks for this recipe! By the way, Tia, since it’s St. Patrick’s Day, maybe you could do an Irish dish today!! *hint hint Shepherd’s Pie??* :D
