This weekend was a very busy one. We spent a lot of time out of the house and finally got to relax and unwind on Sunday. I won’t give a long drawn out run down of the weekend but here’s the roundup of our food. I’m going to say that I was very very bad this weekend. Eating all sorts of not-so-good-for-me stuff. Ah, they were delicious!!!! First up was bang bang shrimp on Friday night for dinner. These shrimp are breaded, then fried and then tossed in a mayo-siracha sauce mixture. Yum! but before that I’m gonna take it back to Thursday when I made coconut and rum crème brûlée just for my PIC. It was Mmmmm Mmmmm good! By the way on Sunday night, we watched Animal Planet’s “Frozen Planet”. Did anyone catch it? I couldn’t stop saying “WOW!!!!” the entire two hours!
Bang Bang Shrimp:
For Saturday’s breakfast we had an egg breakfast bake. I will be posting the recipe in the upcoming week but it’s loaded with peppers, ham and cheese.
We ate out for lunch on Saturday but for dinner I made some simple ham sandwiches.
Sunday:
I had a smoothie for my breakfast – It contained carrots, a pear, a few blackberries, almond milk and an apple. I just basically threw excess fruits I had around into the blender and whipped up this drink. I thoroughly enjoyed it.
When you can’t choose between two things, well, just make both. For weeks I have been trying to decide which of the two to make. I really wanted to do the eggplant parmigiana but I know my PIC wouldn’t go for it so I played around with the chicken parmesan idea, but since I’m trying to incorporate more vegetables and fruits into my diet, the chicken parm with just pasta, most likely, would have been lacking those elements. So on the day I finally made this, I said “I’ll just do both” He’ll have his chicken and I’ll have my eggplant and we’ll both be happy. It took a while but it was worth it. So that was our Saturday dinner.
For our sweet treat, I made individual bourbon-pecan bread pudding with caramel sauce. Yummy!

Wow that eggplant parm looks awesome!! I love bang bang shrimp for bonefish grill so yummy. I’ve been eating bad food too for the last week. Go on vaca and you go crazy eating whatever you want lol.
That eggplant-chicken parm was gooooood!!! And so were the shrimp but I felt a little sick after. Must have been all the “sauce”. How’s your vacation going?
