I have recently discovered chipotles in adobo sauce (First time using them was HERE). Why did no one tell me how AMAZING the stuff was before? I can’t remember where exactly I saw someone raved about it but after reading their post, I went out hunting for this chipotle in adobo sauce. Found it. Made wings. Blended the chipotle in adobo sauce. Tossed wings in sauce. Became hesitant. Then became brave again and bit into a wing. Good gawd almighty. The stuff is fiery and delicious. Just how I love my sauces. There will be no more buffalo wing sauce for me and my wings when I make wings at home. Chipotle sauce all the way. Anywhoos, one day I woke up and decided I wanted to make a chipotle BBQ sauce using the chipotles in adobo sauce BUT I knew that it would be way too spicy for my PIC’s taste. With inspiration from Feral Kitchen, I decided to tone my sauce down a bit by adding strawberries. The result? Gloriousness at its finest. I. Love. This. Sauce!
Ingredients:
1 pound of strawberries (cleaned, hulled and quartered)
1/2 cup tomato ketchup
4 tbsp tomato paste
1/2 can chipotle in adobo sauce (one whole pepper)
1 pimento (from jar)
2 tbsp molasses
2 tsp liquid smoke
1/4 cup brown sugar
1 tsp seasoning salt
1 tsp smoked paprika
3 cloves garlic, chopped
2 tbsp chopped onion
1 tbsp paprika
tsp ground mustard
1/2 lemon, juiced
1 tbsp red wine vinegar
1 tbsp worcestershire sauce
salt to taste
Method:
1. Blend everything in a blender until smooth.
2. Transfer to saucepan and simmer for about 30 minutes.
Simple to make but so good!
Bye For Now…..
