This weekend was a pretty relaxing one. It mostly involved watching a marathon of Frasier, The Hangover (2) (that movie was an hour shame!) and national finals/trials for the USA Olympic teams in track and field and gymnastics. Other than that, there was some cleaning, laundry and cooking. That’s pretty much it. Food-wise, we pretty much had delicious food and drinks all weekend. No complaints at all. Here’s Friday’s dinner. It’s THIS recipe but instead I swapped out the bow ties for penne. Yum!
Saturday morning, I had oatmeal. It was regular steel cut oats cooked in whole milk with pureed bananas added to the mix. After I had dished it out, I decided to add a spoonful of pureed strawbrries I had in the fridge. I used a toothpick to TRY to swirl it. Haha.
Saturday for lunch, I had this amazing salad that I basically threw together. I used a bag of salad mix, some red onions, grape tomatoes, avocados and I grilled a chicken breast I had marinating in chipotle sauce.
Yum Yum!
Sunday breakfast…..Southern all the way – sausage gravy and biscuits. I cheated by using Bisquick instead of my White Lily flour but soon I’ll be making those biscuits the right way.
Halfway through the day, I made this UBER amazing peanut butter-banana smoothie/shake. Goodness it was delicious. BEST smoothie/shake I’ve had in a while
For Sunday dinner we had herb roasted (grilled) chicken breasts. For the chicken, I marinated the breasts in the ingredients in the following photo…The chicken turned out to be tremendously flavorful and moist.
Added some mashed potatoes and stove-top pumpkin macaroni & cheese and viola….
For dessert, I had bread pudding with ice cream, all drizzled with my homemade caramel sauce. Sooooooo good!
T’was another good weekend.

oh my gosh Tia!! If I could only have all those food.. I would willingly sacrifice my diet for it!! hahaha!! You definitely have a way in the kitchen!! :D
