Raspberry Mojito

Today is going to get to about 100 degrees in my neck of the woods and I’m telling you, this is one day that I refuse to leave the house. In the comfort of my lovely air conditioned home is where you’ll find me. Steamy days, like today, call for refreshing and thirst quenching drinks. Whether it’s lemonade, iced tea or a cocktail. Something liquid with lots of ice is the order of the day. These mojitos were made a while back but man, I can tell you that I know a couple people who’ll be out and about in this heat today, who would love one or two of these luscious, minty, tropical, classic cocktails (with a twist).

Ingredients:
10 fresh mint leaves
juice of 4 limes
1 tbsp superfine sugar
5 ounces white rum
3 ounces club soda
10 fresh raspberries

Method:
1. Place mint leaves, about 4 raspberries, lime juice and sugar in a cocktail shaker. Using the straight end of a wooden spoon, gently muddle mint leaves and berries to release flavor and color.

2. Fill a tall glass with ice cubes. Pour in lime mixture. Add rum. Top off with club soda. Drop in the remaining raspberries, and sip!
