My Weekend in Food PT 10

There was nothing particularly exciting about this weekend. Friday evening was spent watching episodes of Frasier (Oh how I love Niles Crane). Saturday, we were out and about for a bit but managed to get back home by 1, where we spent the rest of the weekend watching documentaries about the wildlife to be found in and around Africa. I seriously have lost all respect for lions and leopards. Hyenas lived up to my expectations and cheetahs impressed me mostly because of how agile and talented they are. On Sunday, more relaxing and early bed. See? It was truly a simple weekend. The extreme temperatures outside did not dissuade us from staying indoors. 104 degrees seemed like the perfect weather to be indoors under the breeze of a fan and the air conditioner. Anywhoos, to start off the weekend, for dinner on Friday night we had Shrimp and Basil Stir-Fry

On Saturday morning, I had this delicious crème brûlée oatmeal. I made it before and the recipe can be found HERE

With all that was going on, it was only right to sip on something right? Hubby requested that I make him another delicious Tequila Sunrise

Saturday’s dinner consisted of rice again with this Chicken in Sweet Chili Sauce

For Sunday’s breakfast, I had scrambled eggs, sauteed mushrooms and toasted french baguette slices

For lunch, we had baked chicken parmesan ziti. I fried little cubes of chicken breasts then cooked then in tomato sauce, tossed in some penne, added to a casserole dish and added mozzarella and parmesan cheese in several layers. I then baked for about 30 minutes. Soooo good!

And for the sweet stuff, I made a banana yogurt cake with a cinnamon and rum glaze/icing. Too good!

And there you have it! My weekend in food.

  1. What an impressive array of dishes! The shrimp looks so fresh and succulent. I really like the casserole you put together, the ziti. A much nicer way to eat pasta than just with sauce over the top!

  2. These posts always make me so hungry!! Loving the chicken with sweet chili sauce… one I need to try. Also: we have an abundance of hot peppers growing in our garden. Habaneros, hungarian hot wax, serranos, and hopefully soon some Butch T Trinidad Scorpions. I know you will have some great ideas for what to do with obnoxiously hot peppers :)
