This weekend was so-so. Nothing spectacular except for a little mall trip on Sunday morning. I hate crowds. So instead of going to the mall on Saturday when every Tom, Dick, Harry, Mary, Jane and Sue is there, I decided to go as soon as it was open on a Sunday morning. 10 am I was in the parking lot, waiting to go in and get a few things before all the people got there. Anywhoos, Friday’s dinner consisted of salmon, medley of roasted potatoes (red, gold and purple)… oh yeah, I threw in some green beans too. This salmon recipe is coming to you highly recommended from How Sweet Eats. It’s a crispy bourbon glazed salmon filet. Geese, it was sooooooo appetizing!
Saturday for my breakfast, along with some eggs and bacon, I made a couple giant potato pancakes. Basically, I grated potatoes, then seasoned with a little salt, pepper, paprika, grated yellow onion, chopped scallions, and then fried till crisp. Not the best picture but this was great.
For lunch, we had some turkey bacon burgers. Simple but gooood!
Oh yes….and I did get around to making some beer battered onion rings. Oh man!
To wash all of this down, PIC and I had French 75s. Basically it’s a cocktail consisting of champagne, gin, simple syrup and lemon juice.
Sunday’s breakfast consisted of these things: scrambled eggs, bacon (instead of the sausage that’s in pic), pancakes with fruit sauce and hash brown potatoes. This photo is from a few weeks ago but we had the exact thing so I didn’t take a new pic
Sunday’s lunch/dinner we had steak with mashed potatoes and beans (again) (gotta use up those beans while they’re still fresh)
For sweets, I made some red velvet cupcakes. They were sooo moist and PERFECT (Am I allowed to say that?)
T’was a good “food” weekend.
