In these scorching hot summery days, refreshments are always welcomed. This iced tea is simple and easy to make and the addition of fresh mint to it just makes it even more yummy. I initially started out to make “Southern Sweet Tea” and thought “what the heck, let me just switch it up a bit”. I even added the juice of a few limes and that made it all the better.
Ingredients:
1 quart water, boiling
8 tea bags
1 bunch fresh mint leaves
1 cup sugar
Method:
1. Place 4 c. water in a medium pot and bring to a simmer over high heat. Once water is simmering, remove from heat and add tea bags and mint. Cover and let steep for 10 minutes.
2. Once tea has steeped, remove tea bags and add sugar. Stir to dissolve sugar. Pour in remaining 4 c. cold water. Chill tea in refrigerator. Stir in lime juice and serve over ice with mint sprigs and lime slices for garnish. Add more sugar, if desired.
